5 Best Pakistani Vegan Recipes:

I bring five easy-to-make Pakistani Vegan recipes for people who find it hard to get budget-friendly, Vegan recipes in a meat-loving country. Veganism is a healthy life choice. However, leading a vegan lifestyle in Western countries is very easy. Things get a bit tough for people living in Asian countries such as Pakistan. But, don’t worry. This list will help you continue your veganism journey without any compromises. So, you can live a healthy life on your terms.

Pakistani Vegan Recipes:

The recipes will cover everything, From snacks to show stoppers. Hence I suggest you stick around till the end.

1. Potato Cutlets:

Potato cutlets make a good evening snack. It is easy to make, Budget-friendly and saves you time. I have listed below all the ingredients you need to make this fantastic dish.

Ingredients:

2 medium size potatoes

1/2 cup of peas

Salt ( to taste)

1 teaspoon red chilli powder

black pepper (to taste)

2 tablespoon finally chopped coriander leaves

1 or 2 green chilies (according to your taste)

Almond flour/ plain flour

olive oil/ vegetable cooking oil

1 lemon

finely chopped 1 onion

Instructions:

Start by peeling potatoes and boiling them in salted hot water.

Drain the water and put potatoes in a mixing bowl.

boil peas in a separate pan till they are tender.

Add boiled peas, chopped onion, chopped green chillies and chopped coriander leaves to the mix.

Now add seasonings according to your taste and mix thoroughly.

Make little patties by hand. To avoid stickiness, rub some oil on your palms.

Mix almond flour or plain flour with water to make thick paste.

Put the patties in paste and coat thoroughly. Now, put the coated patties in dry flour and put in oil to fry.

Drain the excessive oil from the patties and serve them warm with mint and coconut chutney.

Prep time for this recipe is approximately 40 mins, with 20 mins for frying.

2. Read Kidney Bean Curry With Rice:

There is a good reason I’ve added this recipe to my Pakistani vegan Recipes list. Kidney bean curry is a staple food in many homes. It is an excellent source of protein and very easy to make. You can serve this with boiled rice or Chapati (flat bread). It can be eaten as lunch or dinner. Moreover, Unlike potato cutlets you can store it in refrigerator as well.

Ingredients:

2 cup red kidney beans

2 table spoon garlic paste

1 and 1/2 onion, finely chopped

2 table spoon chopped coriander leaves

salt ( to taste)

1 teaspoon red chilli powder

black pepper (to taste)

2 tomatoes, finely chopped

Cooking oil

2 cups of rice

Cumin powder (2 teaspoons)

3 pinches of turmeric powder

Instruction:

Soak Red kidney beans overnight or for atleast 6-8 hours in arm water.

Put salt, kidney beans and onion in pressure cooker with water( double the amount of kidney beans, i.e 4 cups)

Close the pressure cooker and let the beans cook thoroughly

Add garlic paste and tomatoes with cooking oil in a separate pot, and cook until the tomatoes are tender.

Add all seasonings except salt (Remember! we did put salt in pressure cooker)

Now add all the ingredients in a pressure cooker in your tomato paste and let it simmer till a thick gravy is formed and the oil is separated.

Now garnish it with coriander leaves and green chillies if you like.

You can serve this dish with boiled rice or Chapati. Enjoy!

3.Vegetable Jalfrezi:

Jalfrezi is a beautiful dish often found in Pakistani restaurants. The vibrant colours of vegetables and incredible taste put it on our Pakistani vegan recipes list. If you are done with bland food, I suggest you try this dish. You can serve this dish with rice or Chapati.

Ingredients:

1 potato sliced

1 chopped carrot

1/2 green capsicum ( sliced quarterly)

1/2 red capsicum (sliced quarterly)

1/4 cup of corn

1/2 cup of peas

1 onion

1/2 cup tomato puree

1/4 cup tomato ketchup

2 tablespoon garlic paste

small piece of ginger ( julienne cut)

2 tablespoon cooking oil

Soy sauce (2 tablespoon)

whole chillies to taste

1 tablespoon white vinegar

salt and black pepper to taste

1/2 cup broccoli

Instructions:

Slice a potato like french fries and fry till gold brown in color.

Now take a separate pan and fry garlic and chillies in it.

Next you will add all the vegetables and stirfry.

after vegetables you will add salt, black pepper, tomato puree and stir fry it further.

After your vegetable stirfry, add soy sauce, vinegar and water for gravy.

Turn off the stove when your gravy thickens, and Voila!! You have a fantastic dinner ready.

This can serve 1 to 2 people depending upon how much you like food (I suggest you have it all for yourself 😉 )

4. Vegetable Pulao:

Vegetable pulao is a wonderful dish to serve guests or make for yourself. Under 40 minutes, you can make this simple, budget-friendly pulao with few ingredients. The scent of basmati rice slowly cooked in vegetable broth is enough to put this dish on our showstopper list. Let’s get cooking!!

Ingredients:

2 cups Basmati rice

1 onion

2 tablespoon garlic paste

1 tablespoon ginger paste

2 medium tomatoes

1 potato sliced

1/2 cup peas

2 carrots

1 capsicum

1/2 cup sliced cabbage

salt to taste

1 tablespoon garam masala

2 or 3 cloves and 3 cardamom

black pepper to taste

1 teaspoon red chilli powder

3 tablespoon cooking oil

Instructions:

Clean and soak the rice in water for 2 hours prior.

Add cooking oil to the pot, put onion in the oil and saute till golden brown.

Now put garlic and ginger paste into oil and saute a little more.

After the paste put cloves and cardamom

Now add garam masala, salt, pepper, and red chilli powder ( sprinkle little water, so your masala base doesn’t burn)

Add all vegetables and let it simmer in Masala base, stirring for two minutes.

Now add rice and keep moving your spatula until the rice’s water evaporates.

Now add four cup of water ( always double the amount of rice)

Let your pot come to a boil. Put your stove on medium and let most waters evaporate.

Now close the lid tightly, and let the rice cook in steam for about 20 mins on low heat.

Garnish with fried onion and chopped coriander leaves.

This dish serves about 4 people.

5. Mushroom And Corn Salad:

A very easy-to-make recipe that you can make in under 15 minutes. A go-to for a quick snack, plus it tastes fantastic. You can always customise your choice of fruit or vegetable in this salad. It usually serves two people, and it tastes best when served fresh.

Ingredients:

1 chopped apple

chopped beetroot (01)

A cup of sliced tin mushrooms

1 cup of tin corns

Finely chopped cucumber

1 tomato chopped

chopped 5 almonds

finely chopped walnuts

4 dates chopped

3 leaves of spinach finely chopped

1/2 cup of chopped cabbage.

2 tablespoon of honey

olive oil

salt and pepper to taste.

Instructions:

Mix honey, olive oil, salt and pepper together to prepare dressing.

Put everything in a bowl and put dressing on top.

Garnish with sliced oranges and enjoy.
